| Rice And Beans |
Brown 1 chopped, medium onion in large saucepan. Add 1 small can tomato paste, 1 cup rice, 2 ½ cups water
Cover and simmer 15 minutes until rice is done.
In separate saucepan heat 1 can pinto beans and 1 can Northern beans. Serve over rice with favorite seasonings. Serves 3 to 4. |
| Ron’s Rice Bake |
Stir ½ cup milk with 1 can condensed soup—any “cream of” soup you like.
Stir in 3 cups cooked rice. Add thawed package of favorite vegetable. Add tuna fish, chicken, sliced wieners, leftover ham, whatever.
Bake in 2-quart, greased baking dish at 350 degrees for 20-25 minutes or until hot all the way through. |
| Easy Red Beans ‘n’ Rice |
Bring 2 cups water to boil. Add 1 cup raw rice. Reduce heat, cover, and simmer for 20 minutes.
In a large skillet over low heat cook 1 pound metts, sausage, kielbasa, wieners, most anything. Stir in 1 chopped medium onion and 1 green pepper until tender. Pour in 2 large cans kidney beans drained and 1 large can whole tomatoes chopped. Simmer uncovered 20 minutes. Serve over rice.
Options: Cook beans in orange juice or hot peppers, crushed pineapple, hot sauce, chili powder, cinnamon, 2 tablespoons peanut butter—whatever suits your fancy.

| Cheese Rice |
Toss together:
- 3 cups hot cooked rice
- 3 tablespoons melted butter
- 1/3 cup or more grated Parmesan or favorite cheese

| Spanish Rice |
| In a large skillet fry 3 or 4 slices of chopped bacon or about 1 cup of hamburger or sausage. Add and cook about ½ cup sliced onions. Add 2 cups cooked rice, 1 large canned tomatoes, 1 chopped green pepper, seasonings, and stir until hot, adding a little water if necessary. |
| Rice and Onion Casserole |
Melt 2 tablespoons of butter in large skillet. Cook until lightly brown ½ cup uncooked rice (and a few mushrooms if you like). Stir in 1 package dried onion soup and 1 cup water.
Cover and cook over low heat for about 25 minutes until rice is tender. Serves 3 to 4. |
